Egg masala is a simple yet tasty egg curry prepared using boiled eggs which are fried and then cooked with onion, tomato and some spices.

This is an ideal combination for chapathi, roti and naan. It also goes well with biryani’s, jeera rice, ghee rice, etc.

Since this is a semi-gravy, we do not add much water nor coconut for thickness. This is a very basic method of preparing egg masala. There is no need to follow any big procedure to make this simple yet tasty curry. This is one dish that can be prepared in less than 20 minutes.

Being a quicky, this dish can be prepared without any hassle by bachelor’s and newbies.

You may adjust the consistency of the curry according to your preferences and also depending on what you are going to serve it with.

How to Prepare Masala Egg – Step by Step Instructions

For Eggs – Sauteing in Masala

  • Frying boiled eggs – Add oil, salt, turmeric powder, chilly powder and boiled eggs. Make slits on the eggs or you may also cut them into two halves. Saute gently for above a minute or two. Transfer to a bowl and keep aside. [Medium Flame]

For Egg masala curry

  • In the same pan – add oil. Once it heats up, add mustard and cumin,allow them to crackle. Now add cinnamon and chopped onions. Saute for 2 minutes. Add curry leaves and ginger garlic paste and saute again for 2-3 minutes until the raw flavor of ginger and garlic is gone and the onions turn slightly golden brown. [High Flame]

  • Now add the powdered spices and salt and combine well.

  • Now add chopped tomatoes. Give it a good mix.

  • Cover and cook for 3-4 minutes until the tomatoes turn soft. [Medium Flame]

  • After 3 minutes, open the lid and gently mash the tomatoes with the back of the spoon.

  • Add water, mix well.

  • Cook for another 3-4 minutes. [High Flame]

  • Add garam masala.

  • Then Add some chopped coriander leaves to enhance its flavor.

  • And then Add the Boiled eggs tossed in masala. Give it a gentle mix.

  • Cover and cook for 2-3 minutes. [Low Flame]

  • Oil starts separating. Cooked well. Turn off the flame and transfer it to a bowl.

Ingredients

  • For Eggs - Sauteing in Masala
  • 2 tsp Cooking Oil
  • 1/4 tsp Turmeric Powder ( Manja Thool )
  • 1/4 tsp Chilli Powder ( Milagai Thool )
  • 1/4 tsp Salt ( Uppu )
  • 5-6Eggs ( Muttai )-(Boiled for 20 minutes on medium heat)
  • For Egg masala curry
  • 2 tsp Cooking Oil
  • 1/2 tsp Mustard ( Kadugu )
  • 1/4 tsp Cumin Seeds (Jeera)
  • 1 inch Cinnamon Stick (Pattai)
  • 1 Onion ( Vengayam ) - (Finely chopped)
  • 1 Tomato ( Thakkali ) - (Finely chopped)
  • curry leaves ( karuvepilai )
  • 1 tbsp Ginger Garlic Paste ( Inji poondu viludhu )
  • 1/4 tsp Turmeric Powder ( Manja Thool )
  • 1 1/2 tsp Chilli Powder ( Milagai Thool )
  • 2 tsp Coriander Powder ( Dhaniya Thool )
  • 1 tsp Garam Masala
  • 1/2 tsp Salt ( Uppu )
  • 1/2 cup Water ( Thanni )
  • Coriander leaves ( Kothamalli ) - (chopped)
