What is Jigarthanda anyway?

Jigarthanda Drink (“Jigar” – Heart, “Thanda” – Cool) is a chilled beverage/drink which literally means “Cool Heart” in English.

And, it does what its name implies – “cools the heart” in any dry and humid place during summer.

Jigarthanda originated in the South Indian city of Madurai in Tamilnadu state.


What goes into Madurai Jigarthanda Recipe?

1. Badam Pisin/Almond gum:

2. Reduced milk(Basundi),

3. Sugar and

4. Sarsaparilla Syrup (Nannari Sharbat).

Simply mix these ingredients, scoop some Vanilla Ice-cream on top and drink it!

Jigarthanda Drink Benefits:

  • Badam Pisin (a hard substance which is white in colour) is a natural body coolant. It is a natural gum obtained from the sweet almond tree. Hence, it is also known as Almond Gum. It usually has a dry and glassy texture. They can be available in white or light brown colour and has a rocky shape. When Badam Pisin is soaked in water for a minimum of 5 hours, it gains a glassy jelly-like consistency.
  • Nannari is a syrup that is made up of the roots called Sarsaparilla. It is also a very good natural body coolant and can help you easily glide through the scorching heat during Summer. They are usually golden yellow to dark brown in colour.

Our connect with Madurai is also special because my husband did his college and few years of schooling there. So he is naturally brought up with the Madurai food.

During my childhood, while visiting my native place, I used to go to Madurai with my parents.

And whenever we go there, we never miss having Tirunelveli Halwa and special Mixture from Prema Vilas shop, very near to Madurai Railway Station, apart from having Jigarthanda.

And not only Jigarthanda, we are big fans of non-veg food from Madurai, especially Mutton (goat meat) based mouthwatering dishes.

Jigarthanda Drink in Chennai:

Since we are now settled in Chennai, we used to have Jigarthanda from “Murugan Idli Kadai” in Besant Nagar and Velachery 100 Ft Road, Chennai.

And there are other Jigarthanda shops as well. But we prefer Murugan Idli Kadai Jigarthanda which comes closer to the original Jigarthanda taste.



Jil Jil Jigarthanda, the name itself is so fascinating that the first time you hear it, it makes you so inquisitive that you would want to try and taste it immediately.

I’m sure this recipe will become your favorite too! After having sumptuous non-veg meals (like rice with mutton ghee roast or vanjaram fish fry), tasting Jigarthanda will make the whole experience an unforgettable one!

Try and perfect this recipe to surprise anyone who hasn’t heard about it. The first time they taste it, make no mistake, they will be all yours!!!




Step by Step Guide to prepare Madurai Jigarthanda Recipe

  • Add 1/4 cup sugar and 2 tbsp water in a pan to make caramelized syrup. Keep stirring continuously until the sugar is dissolved completely. Do NOT add more water.

  • Cook until it turns golden brown colour. Stir continuously to avoid burning.[High flame] Turn off the flame and add little hot water to avoid thickening and keep aside until set to room temperature.

  • In another pan – add full fat milk and bring it to a boil.[High flame] Add sugar and stir until dissolved. You can adjust the sweetness according to your taste.

  • Add 2-3 tbsp of caramelized syrup or until the desired light orange colour. Do NOT add more(it might give you a burnt taste).

  • Keep boiling until the milk is reduced to half. (takes about 40-45 minutes)

  • Scrape the sides every 5 minutes to collect the cream from the milk. Turn off and refrigerate until chilled or 4-5 hours.

  • Take 4-5 pieces of almond gum/ badam pisin and soak it in 1 litre of water for 8 hours / overnight. It almost increases 10 times in volume. It absorbs all the water and turns transparent like a jelly.

  • Now assemble the jigarthanda. Firstly, add 2 spoonful of soaked almond gum in each glass. Secondly, add the chilled reduced milk, almost 3/4th of the glass. You can also add 1-2 tsp of nannari syrup(sarsaparilla syrup).

  • Finally, crown it with a scoop of vanilla ice cream.

Ingredients

  • 1 litre Milk (full fat milk)
  • 3/4 cup Sugar (to add in milk)
  • 1/4 cup Sugar (for caramelized syrup)
