Step by Step – Chicken Hariyali Preparation
For Green Masala Paste
- Firstly, before you start cooking- In a blender/mixer, add a handful of pudina/mint leaves, coriander/cilantro leaves, garlic, ginger, green chillies and curd. Blend it to a fine paste. You need not add water, since you have used curd. Grind it and keep aside the green paste. [Note: You may use ginger garlic green chilly paste too instead of adding them as a whole]
For Hariyali Chicken
- In a kadai – Add oil, once it heats up add bay leaf and chopped onions. Give it a good saute for about 2 minutes. once the onions turn a little transparent, add salt and saute again for 2 minutes. [Medium Flame]
- Now, add cumin powder and garam masala and give it a saute for another 2 minutes. [Medium Flame]
- Its time to add the washed chicken pieces. Add them and combine it well with the onions and masalas. [Medium Flame] [Note: Make sure to wash the chicken at least 3-4 times using turmeric powder and crystal salt]
- Cook the chicken for about 4-5 minutes on medium flame until the chicken turns slightly whitish or rubbery texture. [Bringing it to this texture will remove the raw smell from the chicken].
- Now, add the blended green masala paste to the chicken and give a good mix until well combined. [Medium Flame]. You may add little water if your paste is too thick. I have added 1/2 cup water.
- Cover & cook for 20 minutes or until the chicken turns soft and tender (well cooked). [Low Flame]
- Open and cook until the desired consistency is reached. [Medium-High Flame]
- You may also cook until semi-dry as shown in the image below or in the video recipe.
