How to make Seer Fish Fry Recipe | Chettinad Fish Fry
Vanjaram / Seer fish is a variety of fish found mainly in South India.
It is referred by different names, such as :
- Vanjaram in Tamilnadu and Andhra Pradesh,
- Neymeen / Aiykora in Kerala and
- Anjal in Karnataka.

Step by Step Preparation of Seer Fish Fry with Photos
Add all the ingredients to a blender/mixer and grind it to a fine paste. You can add a teaspoon of water to grind the mixture if required. You can adjust the salt and spice as per your taste.
- Carefully wash the fish slices in water. Add crystal salt and turmeric powder to wash the fish slices. Wash it at least 3-4 times.
- Apply the ground masala paste to the fish slices. Make sure to apply it thoroughly on both sides of the fish.
Marinate and keep aside for about 15-20 minutes.
Shallow fry the fish slices. Make sure the oil is really hot. If you add the fish before the oil is heated up well, then the masala won’t stick to the fish. Always leave some space between the fish slices, so that they cook well evenly. DO NOT clutter the fry pan. Cook for 3-4 minutes. [Medium – Low Flame]
Flip over and cook for another 3-4 minutes. Cook for 2 minutes extra to get the Roasted Golden colour on each side.

- 1 tsp Coriander Powder ( Dhaniya Thool )
- 1/2 tsp Garam Masala
- 1 tbsp Lemon Extract ( Elimichai saaru )
